Chef Valentino, has been collaborating side by side since 2002 with his wife Larissa, sommelier. Together they create a complete and harmonious gastronomic experience. While the chef focusses on the preparation and presentation of the dishes, combining typical Tuscan recipes and high-quality ingredients, the sommelier selects and matches the wines in order to enhance the flavours of the dishes.
The collaboration between those two professionals is essential to ensure that each element of the meal complements each other. The chef, with his knowledge of cuisine, takes into account the flavours, textures and aromas, while the sommelier, with her experience in the world of wine, suggests the most suitable labels for each course, also considering the balance between acidity, sweetness and body of the wine. In this way, the synergy between the two creates a culinary experience in which food and wine are intertwined in perfect harmony.

WINE TASTING

Paolo Petroni is the friendly owner of Enoteca Vanni, a family restaurant since 1965. Paolo, with his excellent expertise, accompanies in the guided tastings, narrating the hyperboles of the wine and advising with dovice at the time of the final sale. The goles are paired with cutting boards of cold cuts and cheeses seasoned to dominate the exclusive space of the pantry. The place is equipped with cellars that extend for about 300 square metres in the basement of the historic building that houses them. The stone walls date back to the 13th century and serve as a niche to the 80 metres of shelves that house 55 thousand wines and spirits that come from all over the world. The oldest underground room dates back to 200 A.D. A faded fresco, placed in a corner of the cellars, recalls that in 1805 these premises were intended for the conservation of oil from the hills of Lucca, collected in four masonry tanks still visible today.
